Seeded Rye Tartine with Blue Cheese, Salami & Peaches

To Assemble                             

  • 4 slices seeded rye bread- sliced 3/4 inches thick                            

  • l/2 cup blue cheese                            

  • 2 peaches                            

  • 12 slices salame cotto or similar nice dried salami                            

  • balsamic vinegar or balsamic reduction - as needed                     

Directions: Preheat an oven to 375F. Slice the peaches into 1/4" slices and reserve. Crumble the blue cheese equally over the slices of bread. Fold the salami over one time into half-moons and place 2 slices on each piece of bread. Bake at 375 for 15 minutes or until the bread is toasted and cheese is melted. Place 2-3 slices of peaches on each tartine, then drizzle with balsamic reduction.
